Actually, this Vegetarian Halloumi, Carrot Salad Recipe originated from my vegan Carrot Salad with Mint and Seeds Recipe but what the heck, if you eat dairy then why not add some halloumi for some extra flavour and protein?
You will love this Vegetarian Carrot Salad with Mint and Seeds Recipe with or without halloumi guaranteed! Try them both depending on what you fancy!
It is the perfect recipe for a BBQ and evening dinner, whether you’re cooking for 2 or 10 it is really quick and easy to make, not to mention highly nutritious! In fact it contains 4 of your 5 a day!
For a bit of naughtiness, you can always enjoy with a glass of Sauvignon or Pouilly Fume from Majestic, they go so well with this dish to compliment the flavours.
Serves: This recipe serves 2 as a main or 4 as a starter.
1 firm block of halloumi, cut into 6-8 pieces and fry, oven bake, grill or BBQ until it starts to brown slightly on both sides.
4 cups of grated carrots (I use the Magimix grater which makes it a doddle and takes a few minutes, I bought it from Amazon, they have some great Magimix discounts on Amazon at the moment)
1 cup mixed seeds or stick to just sesame, pumpkin, sunflower or any nuts
5-10 Radishes cut thinly
1-4 tbs (depending on taste) chopped mint (fresh ideally, from the garden even better!)
1 tsp garlic granules or you can use fresh (optional)
4 tbl spoons of olive oil or any other good oil (any variety)
1-2 tbl spoons of any good vinegar, I used cider or white wine but you can use red wine if you like
1/2 a lemon
To make the salad, simply start with grating the carrots, then cut the radishes really thinly, add to a bowl, sprinkle with the seeds / nuts, mint and then mix all of the salad dressing ingredients in separate jug then pour over the salad according to taste. Simply finish with the lemon, cut the lemon in half, use one half to squeeze over the salad (or add to the salad dressing beforehand) and cut the other half into segments to serve. Voila! It couldn’t be simpler!
If using halloumi simply follow the on pack instructions and add onto of the salad at the very end.
I love the mint in this recipe which is in season at the moment, I have included a picture of it growing wildly in my garden with the bluebells.
