I love this vegan katsu curry recipe. It is healthy and is my go-to comfort food whenever I fancy a takeaway. It never fails to curb my takeaway cravings and I feel great after it. For a bit of naughtiness, you can always enjoy with a glass of Sauvignon or Pouilly Fume from Majestic, they go so well with this dish to compliment the flavours.

 

 

Main ingredient: 1 firm block of large, firm tofu

Breadcrumbs

2 cups of breadcrumbs or crumbed savoury biscuits (use a blender to get into a crumb like consistency)

1-2 tbs chilli flakes, or you can use fresh chilli flakes

1 tsp garlic granules or you can use fresh.

1 cup/120g plain flour (any variety)

1 cup/250ml vegetable or coconut oil for frying

Katsu Curry Sauce

3 tbs sesame oil (vegetable or sunflower is fine too)

2 large onions, peeled & roughly chopped.

3-7 cloves garlic (depending on how much you love garlic)

1 tbs fresh ginger (powder is fine)

2 sweet potatoes diced

2 celery sticks roughly chopped

2 tsp red chillies fresh or dried

1 tsp sea salt

2 cups/480ml Marigold Bouillon vegetable stock or 1 vegetable stock cube

1 can coconut milk

2-3 tbs Kikkoman soy sauce (depending on taste)

1 tbs of turmeric

1 bs any curry powder

2 tbs honey

1 cup of water

Most Asian rice types are fine, I usually go for jasmine, brown or white, pilau or sticky Thai rice.

Method

To make the curry sauce, add the onions and garlic to a pan and slowly cook until they are translucent. Add all of the other roughly chopped ingredients and slowly cook about halfway through before slowly adding the stock, followed by the coconut milk (separate the cream and add cream at the end to prevent curdling) and all other ingredients. Simmer gently for 15 – 20 minutes until soft.

Sieve the ingredients, slowly reheat with the coconut cream and put the curry sauce to one side. It is important to sieve the sauce, if you simply blend up it will taste like soup. I always put aside the left-over ingredients and make into a soup the next day.

To make the tofu put out a plate of plane flour and a plate of breadcrumbs, you can use egg to help coat the tofu if you are not a vegan. Cut the tofu pieces into portions and then carefully coat in flour, egg, breadcrumbs. Add to a hot frying pan, oven dish or deep fry. They will only take a few minutes in a deep fryer or about 10 minutes in a hot oven, turn regularly to make sure they are cooked through and don’t burn. Once they are nicely coated put on a low heat in the oven to keep warm).

Cook the rice according to instructions. Rice should only take around 10-15 minutes to cook. The other ingredients can be kept warm while you are making your rice. Or alternatively cook the rice during the above!

When you rice is cooked simply top with the tofu and cover with the curry sauce. Top with fresh coriander, red chillies or / and sliced spring onions and toasted sesame seeds if you wish– yum!
