What is World Vegan Day?
World Vegan Day is an annual event celebrated by vegans around the world every 1 November. Vegan lifestyle is becoming more and more popular every day. The benefits of veganism for humans and the natural environment are celebrated through different activites and planting memorial trees. The event was established in 1994 by Louise Wallis, then Chair of The Vegan Society in the United Kingdom, to commemorate the 50th anniversary of the founding of the organisation and the coining of the terms 'vegan' and 'veganism'.

Anyone else just love, love, love their veg? I am not a vegan nor vegetarian but a pescatarian. I only recently stopped eating meat. Even as a meat eater and since a very early age, vegetables have always been a hit with me! Raw carrot, avocado and cucumber is up there in my favourite foods!
But it’s not all I eat! I have recently discovered these vegan tortilla wraps which I cannot get enough of, especially since I discovered a really easy way to make homemade tortilla recipe, all you need is flour and water - it is so simple and they taste amazing! The great thing is you can cut out the wheat too, I use spelt flour for example (which I know is ancient relative of wheat, but it sits way better with me than wheat).
I literally can’t stop eating them right now because I am home so much, and the kids and husband love them too! I keep modifying the recipe, I use the homemade tortilla recipe with all kinds of things such as vegetarian chilli, curry, fried peppers and tofu with taco seasoning and chillies. However, the recipe I am focusing on today is a tangy vegan tortilla wrap made with cold veg and a delicious dressing!
The best thing is that minimal cooking skills are needed for this one (unless you count roasting the seeds in a pan and mixing the flour and water together and cooking the wraps, I suppose). If you want to cheat, then just buy your wraps and use raw seeds!
So as it’s World Vegan Day I wanted to share this recipe with you all in celebration of eating delicious veg, whether you’re a vegan, meat eater or pescatarian no one can argue with the benefits of eating as much veg as reasonably possible.
Tangy Veggie Wrap Recipe (for the ultimate pick me up!)
This refreshing and tangy veggie wrap that’s easy to make and perfect for on the go – ideal for any season packed in a lunch box, a quick lunch at home, bbqs, picnics or whatever. I take about 20-30 minutes to make depending on whether you are making the wraps yourself (which I really recommend you do by the way! Much better for your tummy and the environment as flour comes in paper bags, wraps come in plastic) This recipe serves 2, simply double the quantities if you want to feed more. You can get all of the ingredients online from Waitrose or Planet Organic.
Ingredients for the filling:
- 3 tbsp pumpkin seeds
- 2 medium carrot
- 1 clove of crushed garlic (add more if you’re a garlic fan like me, I will add 4!)
- 1 small red onion 1 red pepper, red (or your favourite colour)
- 1 small handful spinach, coriander or mint or something similar
- 1 thumb of ginger, fresh (grated)
- 2 tbsp tahini
- 1 tsp lime zest
- 3 tsp wasabi paste (leave out or replace with fresh chillies if you prefer)
Homemade Tortilla Wraps Recipe
- 2 cups of strong flour (wheat, rye, gram, spelt are fine)
- ½ cup of water
- Drizzle of olive oil salt and pepper to taste
Divide the mixture into 4 balls, roll out to about 3mm thick, pop in a pan and fry on either side for a minute or two until they are nicely browned. Serve immediately hot or cold.
For the dressing:
Roast the pumpkin seeds in a pan without any oil/fat until golden brown.
Peel and grate the carrots.
Wash and dice the red pepper (get rid of the seeds and white bits).
Peel the red onion and cut into rings.
Wash and drain the green leaves of your choice.
Peel the garlic and ginger and grate it into a bowl.
Add the chillies / and or wasabi, tahini, lime zest and mix it well.
Spread the dressing mixture onto the wraps, stopping about 1cm from the edge.
Lay the leaves on top.
Put the other ingredients a third of the way into the wrap (nearest the side you will wrap from) and sprinkle the roasted sunflower seeds on top.
Season with a dash of salt and pepper and fold the wraps a little on both sides, then at the bottom and roll it as tightly as possible (without squishing the insides out!).
Cut the wraps into halves and serve. Enjoy!
